HAM Inspector II is an in-line inspection system for fat and salt analysis in the cured ham industry. It enables classification of hams and shoulders according to weight and fat content, optimizing the salting process based on the characteristics of each piece.
Through fast and non-invasive analysis, the system provides objective piece-by-piece data to improve salting homogeneity, reduce deviations, and support decision-making during the production process.
With a capacity of up to 1,200 pieces per hour, HAM Inspector II can be integrated into new or existing production lines and can connect to classification systems, traceability systems, barcode readers, RFID tags, and production databases.
Main advantages
Objective raw material classification
Inspection of hams and shoulders and classification by weight and fat percentage before the salting process.
Optimization of the salting process
Enables determination of the optimal salting time for each piece according to its weight and fat content.
In-line fat and salt control
Measures fat and salt content quickly and non-invasively, without damaging the product or disrupting the production flow.
Dynamic weighing and integration
Includes high-precision dynamic weighing and integrates with classification systems, traceability systems, and production databases.
Integration wit HAM BrAIn
For advanced process optimization, HAM Inspector II can be complemented with HAM BrAIn, Lenz Instruments’ artificial intelligence software for modeling and optimizing cured ham production.
